Cascadilla Soup

Cascadilla Soup is an ode to my mother, Zena Wolfe. I hadn’t made this recipe in many years, but it stood the test of time. It’s a perfect-for-summer gazpacho-style soup that is super easy to prepare and a nice way to start off dinner (or have for a light lunch).
