Roasted Halibut with Cherry Tomatoes
What a nice change from salmon! This dish was sublime with the moist and slightly dense, yet creamy taste of the halibut paired with the sweet acidic flavor of the roasted cherry tomatoes. The honey, vinegar and shallots bring a level of sophistication to the dish with ease. Finishing any roasted dish with fresh herbs makes you look like a pro. This was truly one of the easiest, prettiest and delicious one pan recipes I’ve made!
